Work Setting: Japanese Restaurant
Education: Completion of a college or other program related to hospitality or food and beverages service management.
Experience:
- Several years of working experience in management roles, with at least 3 – 5 years in restaurants and food service settings.
- Prior knowledge of Japanese cuisine and sushi, including key ingredients, preparation methods, and standard dish names.
- Ability to accurately use and understand Japanese food terminology commonly used in menus and operations and to explain these items clearly to guests and staff.

Job Description:
- Plan, organize, and control daily operations of the dining room, kitchen, and sushi bar, including opening and closing procedures.
- Communicate with the head sushi chef to ensure consistent food quality, proper presentation, and adherence to traditional or neo-Japanese culinary standards.
- Recruit and oversee new employees training.
- Address customer service issues on the floor, respond to feedback, resolve complaints, and build relationships with regular guests to promote repeat business.
- Control inventory of food, beverages, and supplies; manage stock rotation to minimize waste and control food costs.
- Negotiate arrangements with suppliers for food and other supplies.
- Prepare and review daily sales reports, analyze costs, and help create operating budgets; implement measures to improve profitability while maintaining quality standards.
- Develop and implement service standards and operating procedures appropriate for an authentic Japanese restaurant, including etiquette, greeting protocols, and timing of courses.
- Coordinate promotional activities such as special events, set menus for holidays, etc.
