Responsibilities
Tasks
• Execute regional Indian recipes, including rich curries, biryanis, and specialized vegetarian and non-vegetarian dishes, ensuring strict adherence to authentic flavor profiles and presentation standards.
• Operate traditional Tandoor ovens to prepare artisan breads (e.g., naan, roti, paratha) and marinated tandoori meats, ensuring optimal temperature control and authentic char and texture.
• Team up with chef’s to prepare new menu items and seasonal dishes
• Manage high-volume cooking during peak dining hours and catering events, maintaining consistency, quality, and timely service without compromising authentic taste.
• Prepare and cook special meals for patrons with specific dietary needs, carefully managing allergens (such as nuts and dairy common in Indian cuisine) and ensuring cross-contamination protocols are strictly followed.
• Schedule, supervise, and train kitchen helpers and junior line cooks in authentic Indian food preparation techniques, proper spice blending (masalas)
• Monitor the flow of kitchen operations to ensure coordination between different stations (e.g., curry station, tandoor station, appetizer station).
• Consistently inspect food preparation and serving areas to ensure adherence to our high culinary standards and presentation requirements.
• Maintain accurate inventory and records of food, spices, supplies, and equipment. Monitor stock levels of specialized imported ingredients and place orders to prevent shortages.
• Ensure strict compliance with provincial food safety regulations, maintaining impeccable cleanliness of the kitchen, work areas, and specialized equipment like the Tandoor oven.
• Set up and oversee extensive lunch and dinner buffets, ensuring dishes are replenished promptly, maintained at safe temperatures, and presented attractively.
• Monitor ingredient usage to minimize food waste, implementing effective portion control and optimal utilization of fresh produce and proteins.
