• Key Duties and Responsibilities:
- Prepare and cook complete traditional Japanese meals or individual dishes and side dishes from
the menu
- Prepare dishes for customers with food allergies or in tolerances
- Weigh, measure, and mix ingredients according to recipes using various kitchen utensils and
equipment
- Season and cook food according to recipes or personal judgment and experience
- Check the quality of raw and cooked products
- Store ingredients and raw materials on proper temperature
- Plan and develop menus, and determine size of food portions
- Train and supervise new kitchen staff to ensure adherence to recipes, food safety standards, and
kitchen procedures
- Improve kitchen operational processes to reduce food costs and minimize waste
- Maintain inventory and records of food, supplies and equipment
- Estimate expected food consumption and order ingredients and supplies
- Maintain sanitation, health, and safety standards in work areas
- Clean and inspect kitchens and work areas

• Experience: 2 to 3 years of related cooking experience is required
