• Key Duties and Responsibilities:
- Prepare and cook Japanese dishes such as sushi, sashimi, maki rolls, donburi and daily specials
- Plan the menu and change menu items depending on season and availability of fresh fish
- Check fish, seafood and produce deliveries for freshness and quality
- Order fish, produce and other kitchen supplies from suppliers
- Supervise kitchen staff during food preparation and service
- Train kitchen staff on sushi making, knife skills and food handling
- Control food costs and portion sizes to reduce waste
- Prepare dishes for customers with food allergies
- Create new recipes and menu specials
- Keep the kitchen clean and follow food safety and sanitation standards, including proper handling and storage of raw fish
- Manage overall kitchen operations
