Key Duties and Responsibilities
Supervise the daily work of kitchen staff who prepare and portion food for Swiss Chalet menus,
and assign stations and duties at the start of each shift.
Build the weekly kitchen schedule and set the procedures the kitchen follows for opening, peak
service, closing and cleaning.
Monitor cooking, portioning and plating through service so that our rotisserie chicken, ribs and
every other order meet the brand's recipe, temperature and presentation standards and go out on
time, and correct anything a customer raises a concern about.
Estimate the ingredients, packaging and supplies we need each week, place the orders with our
suppliers, and check deliveries in against invoices.
Keep records of inventory counts, food and packaging waste, daily sales and equipment servicing,
and report food and labour cost results to the owner.
Train kitchen staff in their job duties, in the safe use of kitchen equipment, and in food safety and
sanitation procedures.
Take part in interviewing and selecting new kitchen staff, and in setting kitchen procedures and
cost targets.
Requirements
• Education: Secondary (high) school graduation certificate
• Experience: 2 to 3 years of experience in food preparation or service
• Language: English
• Staff Supervised: 5–10 people
• Area of Specialization: Full-service and quick-service restaurant operations
• Work Conditions and Physical Capabilities: Fast-paced environment; standing for extended
periods; work under pressure; tight deadlines; repetitive tasks; attention to detail
