Languages: English
Education: College, CEGEP or other non-university certificate or diploma from a program of 3 months to less than 1 year or equivalent experience
Experience: 3 years to less than 5 years of culinary/food industry experience with some kitchen supervisory experience.
Credentials: Safe Food Handling certificate
On site: Work must be completed at the physical location. There is no option to work remotely.
Responsibilities and tasks
· Plan, organize, and direct all daily Back of House (BOH) operations, food preparation workflows, and specialized ramen production lines.
· Evaluate kitchen efficiency and modify operational procedures to optimize food execution times, ingredient usage, and waste reduction.
· Implement and oversee rigorous food safety, sanitation, and hazard control procedures in full compliance with local public health regulations.
· Develop and manage BOH budgets to regulate the exact cost of food, specialized ingredients, kitchen inventory, and cleaning supplies.
· Monitor kitchen revenues against operational expenditures to calculate, analyze, and regulate labor cost metrics.
· Control and audit inventory levels, implementing automated or manual tracking procedures to match stock usage with sales patterns.
· Negotiate high-volume arrangements with food distributors and specialty Japanese ingredient suppliers to secure premium pricing and consistent supply lines.
· Recruit, onboard, and oversee professional kitchen staff training, establishing strict benchmarks for culinary standards.
· Establish staff work schedules based on peak business forecasting, ensuring labor allocations align with operational budgets, or assist the restaurant manager.
· Monitor and evaluate staff performance, addressing productivity gaps and leading progressive coaching sessions.
· Conduct formal performance reviews and make final executive recommendations regarding staff promotions, compensation changes, or terminations.
· Perform final quality checks on dishes to guarantee strict adherence to brand recipes, presentation standards, and portion controls.
· Address and resolve escalated customer complaints or feedback regarding food quality, dietary restrictions, or kitchen execution errors.
· Collaborate on marketing plans with the Restaurant Manager/General Manager, executing seasonal menu adjustments and analyzing their impact on back-of-house logistics.
· Provide hands-on culinary instruction or back-up food preparation exclusively for training purposes, menu testing, or during critical peak operational shortages.
· Perform other related duties as per business requirements.
